Menu Plan Monday...

It was such a cloudy weekend here, but that offered us some rest.  I love some couch time!  I am so excited for this week, it is the end of the Husband's semester!  We've survived another one!  While he'll move right on to fishing, planning meals and having some evening down time just got a whole lot simpler. 

I'm also planning to review a meal this week.  I love PF Changs.  The nearest one is three hours away.  So when I was able to use a sale and a coupon to get a freezer meal at less than half the cost I snagged up a General Chang's Chicken.  I do already think they are expensive I've seen them full price in stores from $7.99 to $9.99.  In our house spending that much on a meal is a lot.  But there could be some at home date night potential here.  Speaking of date nights, we had one on Friday thanks to a work event of mine and it was wonderful.  I'd forgotten how much we need that time together. 

There are also quite a few salads this week as we finish off our lettuce, it's getting warm (we'll be close to 90 degrees a few days this week) and I'm sure this is the last of it until fall!

Monday - PF Chang meal with rice
Tuesday - Spaghetti with salad
Wednesday - PW's Pot Roast with Mashed potatoes
Thursday - Grilled Chicken with squash and bread
Friday - Blackened wahoo served on a salad
Saturday - Steaks with asparagus and new potatoes in butter and dill
Sunday - Creamy Cajun Shrimp Linguine (From Cooking Light - a great easy way to fix shrimp!)

Weekend...

I'm so happy the weekend is here and thanks to a stormy wind filled weekend all three of us will be home together!  It looks like this will be the last weekend like that for a while too - he's not scheduled to have another weekend off until the very end of June.  Summer is here.  In full force.  Now if a few blue marlins would please swim his way. 

We get a date night tonight, because I've got a work event at one of the few very fancy places in town.  Tomorrow we'll have breakfast at The Pier and swing and walk the dog on the beach.  Sunday we'll have Church and brunch and bible study.  I'm so looking forward to this weekend.  And squeezing a little rest out of it too.  Rest has been in short supply these days and is needed.

I'd feel bad to use poop in the title, but it happens...

When poop (or lack of) makes you late for work - you might be a working mom. 

This morning my little announced that he needed to go potty at 10 minutes before "walk out the door" time.  We were putting the finishing touches on the morning.  The Husband offered to stay if he took longer but I said no - he won't be but a minute, and sent him on his way.  Wrong. 

The poor monkey has dealt with issues in the poop department for nearly two of his almost three years.  This morning was the worst yet though - we both cried at one point.  But in all honesty who has to call their boss and let them know that poop is making them late to work?  Two hours late (yes, this took him two hours, I told you it was bad).  I'm lucky to have some understanding around here and jokes - lots of prune juice jokes. 


And really - all I can do is laugh.  Well laugh and feel bad for the little guy.

Party Time!!!

This little corner of the internet has been quiet lately for no other reason than everyday life has taken over full force these past few weeks.  I feel like I can say we've made the transition to our "busy season" without a doubt.  The Husband has been fishing up a storm and prepping boats left and right and it seems that summer has been dropped in our laps and we're just waiting for the water to warm up enough to swim.  In honor of welcoming summer (and to say so sorry for my absence) I thought I'd have a little party for you - a Thirty One Party!

Menu Plan Monday...




What do you do when you plan is up in the air?  Seriously, I sat down last night to plan our week and was baffled.  I had no clue where to fill things in and make it all come together.  So I planned dinner for tonight, but with my Husband's class schedule this week, a short week at work, company arriving (including someone whom I've never met and have been given no indication as to his tastes) - I felt lost as I stared at my planner. 

Tonight we're having chicken cacciatore - because it was in our freezer and all I have to do is boil water for pasta and make a salad. 

Tomorrow - I have no clue at the moment.  I do have the benefit of having a well stocked house though, we've got every variety of protein and carbs imaginable!  I'll keep you posted as our week of wondering progresses, but what do you do when you feel like life is up in the air and keeping you from planning a solid menu?  And you budget isn't designed, nor do you want to be swinging in and out of places picking up dinner all week....
